Carry Along Pork Salad

  • 1/3 cup (2 oz.) Cooked Trimmed Carolina Pride™ Pork Loin, cut into 3x1/2x1/4 inch strips
  • 1 Medium Carrot, diagonally sliced
  • 1/2 cup Red and Green Grapes
  • 1 cup Torn Fresh Spinach
  • 2 T. Lemon-flavored Yogurt

Combine pork strips, carrots, and grapes. Place spinach in container with tight fitting lid, top with pork mixture. Refrigerate overnight, if desired. Spoon on yogurt.

Makes 1 serving
