Southwestern Meatloaf with Fresh Tomato Salsa
- 1 1/2 lb. Carolina Pride™Ground Pork
- 2 slices White Bread, torn into coarse crumbs
- 1/3 cup Finely Chopped Onion
- 1/4 cup Milk
- 1 Egg, slightly beaten
- 1 1/2 tsp. Chili Powder
- 1/2 tsp. Each Ground Cumin and Dried Oregano Leaves
- 1/4 tsp. Each Garlic Powder and Pepper
Prepare Fresh Tomato Sauce as directed below. Combine ground pork, breadcrumbs, onion, milk, egg, chili powder, cumin, oregano, garlic powder, and pepper in a large bowl, mixing lightly but thoroughly. Shape mixture into 6x4x3 inch loaf. Place meatloaf on rack in shallow roasting pan. Bake in 350'F oven for 1 hour 5 minutes, or until internal temperature reaches 170'F. Cut into six slices and serve with Fresh Tomato Salsa.

Fresh Tomato Salsa
- 1 cup Finely Chopped Tomatoes
- 1/4 cup Chopped Green Bell Peppers
- 2 T. Finely Chopped Onion
- 1 T. Snipped Fresh Cilantro
- 1 Cloves Garlic, minced
- 1 tsp. Fresh Lemon Juice
Combine tomatoes, green pepper, onion, cilantro, garlic and lemon juice; mixing well. Cover and let stand at room temperature until serving.
