Southwestern Meatloaf with Fresh Tomato Salsa

  • 1 1/2 lb. Carolina Pride™Ground Pork
  • 2 slices White Bread, torn into coarse crumbs
  • 1/3 cup Finely Chopped Onion
  • 1/4 cup Milk
  • 1 Egg, slightly beaten
  • 1 1/2 tsp. Chili Powder
  • 1/2 tsp. Each Ground Cumin and Dried Oregano Leaves
  • 1/4 tsp. Each Garlic Powder and Pepper

Prepare Fresh Tomato Sauce as directed below. Combine ground pork, breadcrumbs, onion, milk, egg, chili powder, cumin, oregano, garlic powder, and pepper in a large bowl, mixing lightly but thoroughly. Shape mixture into 6x4x3 inch loaf. Place meatloaf on rack in shallow roasting pan. Bake in 350'F oven for 1 hour 5 minutes, or until internal temperature reaches 170'F. Cut into six slices and serve with Fresh Tomato Salsa.

Makes 6 servings

Fresh Tomato Salsa

  • 1 cup Finely Chopped Tomatoes
  • 1/4 cup Chopped Green Bell Peppers
  • 2 T. Finely Chopped Onion
  • 1 T. Snipped Fresh Cilantro
  • 1 Cloves Garlic, minced
  • 1 tsp. Fresh Lemon Juice

Combine tomatoes, green pepper, onion, cilantro, garlic and lemon juice; mixing well. Cover and let stand at room temperature until serving.

Yields: 1 1/3 cups
