Savory Pork Soup

  • 1 1/2 lbs. Carolina Pride™ Boneless Pork Shoulder, cut into 1-inch cubes
  • 1/4 cup All Purpose Flour
  • 2 tsp. Vegetable Oil
  • 1 Bunch Green Onions, sliced
  • 2 Garlic Cloves, minced
  • 2 (16 oz.) cans Tomatoes, undrained
  • 2 (10.5 oz.) cans Beef Broth
  • 1 (16 oz.) jar Small Boiled Onions, drained
  • 1(6 oz.) can Vegetable Cocktail Juice
  • 1/2 cup Water
  • 3 stalks Celery, sliced into 1 inch pieces
  • 2 medium Yellow Squash, sliced
  • 1 Bay Leaf
  • 1 T. Dried Parsley Flakes
  • 1 tsp. Salt
  • 1/2 tsp. Seasoned Pepper

Dredge pork cubes in flour, coating well. Heat in a Dutch oven; brown cubes on all sides in hot oil. Add green onions and garlic; cook over medium-high heat for one minute, stirring constantly. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 1 to 1 1/2 hours, stirring occasionally.
