Sausage and Broccoli Casserole
- 1 lb. Carolina Pride™ Country Sausage, hot or mild, crumbled
- 1 (10 oz.) Frozen Chopped Broccoli
- 1/4 cup Mild Cheddar Cheese
- 3 T. Chopped Green Pepper
- 2 T. Grated Onion
- 3 T. Minced Freshly Parsley
- 2 T. All-Purpose Flour
- 1/3 cup Milk
- 1/2 cup Dry Breadcrumbs
- 3 Hard-Cooked Eggs, sliced
- Hot Cooked Rice
- 1 (10 3/4 oz.) can Cream of Mushroom Soup-undiluted
- 3 T. Melted Butter or Margarine
Cook sausage until brown, drain. Cook broccoli by package directions; drain well. Place broccoli in lightly greased 1 1/2 quart casserole. Combine sausage, cheese, pepper, onion, parsley & flour in medium bowl; spoon 1/2 of sausage mixture over broccoli. Top with egg slices. Spoon remaining mixture over eggs. Combine soup and milk; pour over casserole. Combine breadcrumbs and butter; sprinkle over casserole. Bake at 375'F for 30 minutes. Serve over hot cooked rice.
