Pork Tenderloin Flambe
- 1 Carolina Pride™ Pork Tenderloin (3/4 -1 lb.)
- 2 T. Butter or Margarine
- 1 Medium Onion, finely chopped
- 2 Cloves Garlic, minced
- 1 (15 oz.) can Tomato Sauce
- 2/3-cup Vinegar
- 2/3-cup Firmly Packed Brown Sugar
- 2 T. Chili Powder
- 1 T. Prepared Mustard
- 1/2 tsp. Pepper
Melt butter in a large skillet over low heat; add onion and garlic and cook till tender. Add remaining ingredients, except ribs, and bring to a boil. Reduce heat, and simmer for 20 minutes, stirring occasionally. Place a large piece of foil over coals beneath grill to catch drippings. Baste meatiest side of ribs with sauce. Place ribs on grill, meatiest side down, about 6 inches above low coals; baste topside. Close grill hood. Cook about 20 minutes; turn ribs, and baste. Cook 45 minutes more or till done, basting every 10 to 15 minutes with sauce.
