Pork Medallions and Black Beans

Ingredients:
- 3 T. Soyeans Sauce
- 2 T. Sherry 1 T. Ginger root, grated
- 1 lb. Carolina Pride™ Pork Strips
- 2 T. Flour
- 1 T. Oil
- 1 T. Sherry
- 1/2 cup Green onion, chopped
- 15 (fl. Oz.) Canned black b
Combine soy sauce, 2T of sherry and grated ginger root in a shallow dish.
Pound pork strips slightly then arrange in the soy marinade, turning to coat both sides; set aside for 15 minutes. Drain and dust lightly with flour. Cook in skillet in oil over medium-high heat until done, about 3 minutes per side. Remove from the skillet and keep warm. In a small bowl, combine the remaining marinade, remaining 1 T. sherry, water, and chopped green onions. Stir into the skillet and bring to a boil; reduce the heat, and simmer for 2 minutes. Stir in canned black beans. Heat through. Serve with pork.
