Orange Ginger Pork Roast
- 1 (3-4 lb.) Carolina Pride™ Boneless Pork Roast
- 1 tsp. Dry Mustard
- 1 tsp. Salt
- 1/2 tsp. White Pepper
- 1/2 tsp. Ground Ginger
- Glaze (recipe Below)
Combine dry mustard, salt, white pepper, and ground ginger; mix well and rub into roast. Place roast on rack in shallow roasting pan. Insert meat thermometer so bulb is center of the thickest part of roast. Cook, uncovered, at 325'F for 35 to 40 minutes per pound or till meat thermometer registers 170'F; basting with glaze every 10 minutes during last 30 minutes of baking time. Let roast stand 10 minutes before carving to allow juices to set. Makes 10 to 12 servings
Glaze:
- 1 cup Orange Marmalade
- 1/4 cup Light Corn Syrup
- 2 T. Lemon Juice
- 1/2 tsp. Dry Mustard
- 1/2 tsp. Ground Ginger
Combine orange marmalade, corn syrup, lemon juice, dry mustard and ground ginger in a medium saucepan. Cook over medium heat for 5 minutes, stirring frequently.
