Hot and Spicy Pork Chili

  • 1 lb. Carolina Pride™ Boneless Pork Shoulder, cut into 1/2-inch pieces
  • 1 lb. Bulk Pork Sausage
  • 1/2 cup Chopped Green Pepper
  • 1/2 cup Chopped Onion
  • 2 Cloves Garlic, minced
  • 1 (28 oz.) can Tomatoes, broken up
  • 1 (15 1/4 oz.) can Kidney Beans, drained
  • 1 (8 oz.) can Tomato Sauce
  • 3/4-cup Beer
  • 1 1/2 T. Chili Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Ground Cumin
  • 1/8 tsp. Crushed Red Pepper (optional)
  • Dairy Sour Cream (optional)
  • Shredded Cheddar Cheese (optional)

In a 3-quart microwave able bowl combine pork, sausage, green pepper, onion, and garlic. Cove with plastic wrap, venting slightly. Cook 15 minutes and at medium or 50% power, stirring every 5 minutes. Stir in tomatoes, kidney beans, tomato sauce, beer, chili powder, salt, cumin, and red pepper, if desired. Cook, covered, 20 minutes at High; stir well. Reduce power to Medium or 50% power and cook 30 minutes; stir and remove cover after 20 minutes. To serve, garnish with sour cream and shredded cheddar cheese, if desired.
