Ham Steak with Red-Eye Gravy

  • 1 (1 lb.) Carolina Pride™ Ham Steak about 1 inch thick
  • 2 T. Light Brown Sugar
  • 1/4 tsp. Cinnamon
  • 1/8 tsp. Cloves
  • 2 tsp. Instant Coffee Powder
  • 1 cup Boiling Water

Trim and dice fat from ham. In cast iron skillet cook fat over medium heat until it renders 2 tablespoons drippings. With slotted spoon, discard solids. Meanwhile, in small bowl combine sugar, cinnamon and cloves; rub into both sides of ham. Add ham to hot skillet and cook until browned, about 2 minutes per side. Transfer to platter and keep warm. In cup dissolve coffee in boiling water and add to skillet. Cook until syrupy, about 10 minutes.
